Ukoy (okoy) must be one of my all time favorite savory meriendas (snacks).  Not only that it’s inexpensive and easy to make, ukoy is wonderful reinvented.  Lately I’ve been using Krusteaz Buttermilk Pancake Mix to eliminate batter guesswork.

    A star during my husband’s belated bday blow-out! I put lots of shrimps which turned out very crispy plus the good old vinegar sauce with lots of garlic. It’s the second time I cooked it since I saw the recipe. Great ukoy comeback in my table. Thanks.

    you know, i never really knew what went into ukoy. i knew there was shrimp, but didn’t realize how tiny they were. it’s obviously been YEARS since i had the stuff.
