Fried Spring Roll (Sumpia)

I have leftover filling from yesterday’s lunch and I wrapped them in ready-made lumpia wrappers (available in Asian stores).  This version is fried and dipped in either sweet and sour sauce or vinegar/soy dipping sauce.

Ingredients

  • 1 oz vinegar
  • 1 oz soy sauce
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 stalk of green onions, chopped
  • Sriracha to taste
  • sesame oil, optional

Directions

  1. Mix all ingredients in a small bowl.  Serve with spring rolls on a bed of pea shoots and tendrils salad.
