I have leftover filling from yesterday’s lunch and I wrapped them in ready-made lumpia wrappers (available in Asian stores). This version is fried and dipped in either sweet and sour sauce or vinegar/soy dipping sauce.
- 1 oz vinegar
- 1 oz soy sauce
- 1 teaspoon sugar
- 1 clove garlic, minced
- 1 stalk of green onions, chopped
- Sriracha to taste
- sesame oil, optional
- Mix all ingredients in a small bowl. Serve with spring rolls on a bed of pea shoots and tendrils salad.
